- 4 cups milk
- 1 1/2 teaspoons salt
- 2 cups quick-cooking oatmeal
- 1/2 to 3/4 cup heavy cream
- 6 tablespoons dark brown sugar
Preheat broiler. In a large
saucepan, combine the milk, 2 cups of water and the salt and bring to
a boil. Sprinkle the oatmeal slowly onto the surface of the liquid so
that it does not stop boiling, and boil gently over moderate heat, stirring
from time to time, for about 5 minutes. Ladle the cooked oatmeal into
indivdual heatproof bowls. Pour 1 to 2 tablespoons of heavy cream around
the edge of each bowl and sprinkle the center with 1 to 1 1/2 tablespoons
brown sugar to taste. Place bowls under the broiler and broil until sugar
melts and begins to bubble, about 1 minute. Serve hot.
Yield: 6 bowls
