Zucchini Bread

  • 1 cup oil
  • 2 cups grated zucchini
  • 1 teaspoon baking soda
  • 1/4 teaspoon allspice
  • 1 tablespoon cinnamon
  • 3 eggs
  • 3 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 1/2 cup chopped walnuts

Preheat oven to 300 degrees. Mix dry ingredients in large bowl;add eggs, then oil and vanilla. Bake in two loaf pans for 1 1/2 hours. Cool bread in pans for 15 minutes before allowing to cool on cooling rack.

Yield: two 9 x 5 x 3 inch loaf pans
