Brunch Ham Custard

  • 8 1 ounce slices ham
  • 2 leeks, thinly sliced
  • 1 1/2 cups Cheddar cheese, shredded
  • 10 eggs
  • 1 1/2 cups half and half
  • 1 tablespoon prepared mustard
  • 1 teaspoon mild curry powder

Grease 8 individual 8 ounce ramekin dishes. Divide the leeks evenly among the dishes. Cover leeks with a ham slice, and sprinkle the cheese over the ham slices.

In large bowl, beat eggs until light. Add half and half. Blend in mustard and curry powder, mixing well. Pour custard mixture into each dish, dividing evenly. Bake at 350 degrees for 35-45 minutes, or until top begins to turn a light brown, and eggs are puffy.
