Banana Fritters

  • 1 cup sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/3 cup milk
  • 2 teaspoons oil
  • 3 bananas, chopped
  • oil for frying

In a medium bowl combine the dry ingredients. In a large bowl beat the egg with the milk and oil. Stir in the dry ingredients. Dip the bananas into the batter and fry in a large skillet of oil at 375 degrees until golden. Drain on paper towel; roll in sugar and serve hot.

Yield: 6 servings
