October 2009: Quick Blini with Sour Cream

  • 3/4 cup buckwheat flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 eggs, slightly beaten
  • 1/4 cup sour cream
  • sour cream for garnish

Mix buckwheat and all purpose flour, baking powder, and salt together. Add remaining ingredients. Stir well. Bake on preheated, greased griddle, making each pancake small (3 inches across) and very thin. Brown on both sides, turning only once. Serve with additional sour cream.

Yield: 20-25 dollar size pancakes
