Cinnamon-Apple Cake

  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 1/2 cups flour
  • 1 1/2teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1/4 cup sugar
  • 6 oz cream cheese, softened
  • 2 teaspoons ground cinnamon
  • 2 Red or Golden Delicious apples

Beat sugar, butter, cream cheese, and eggs until well-blended. Add vanilla and dry ingredients; mix well.

Combine 1/4 cup sugar and 2 teaspoons cinnamon. Peel and chop 2 cups apples (about 2 large). Combine 2 tablespoons cinnamon-sugar mixture with apples. Stir apples into cake batter.

Pour batter into greased 13 x 9 inch cake pan. Sprinkle with remaining cinnaomon-sugar.

Bake at 350 degrees for 40 minutes, or until top bounces back when lightly touched.

Yield: 12 servings
