December 2009: Rice with Bananas
- 4 bananas
- 1 tablespoon vegetable oil
- 2 cups long-grain rice, cooked
- 1 pinch salt
- 1/4 teaspoon saffron threads
- 2 teaspoons hot water
- 1 pinch cayenne pepper
- 2 tablespoons parsley, chopped
Preheat oven to 300 degrees. Dissolve saffron in hot water for 5 minutes, then stir into rice. Spoon rice into shallow casserole. Place in oven to dry slightly.
Peel bananas; cut lengthwise. Heat oli in large skillet. Fry bananas until golden brown on both sides. Season with salt and cayenne pepper.
Sprinkle chopped parsley over rice. Arrange fried bananas on top.
Yield: 4 servings
